I love cous cous but sometimes eating it by itself makes me want more. I like to add it on top of my salads to make it more filling and give my salads a burst of flavor! I bought this pearl cous cous at Costco! It’s only 130 calories. YUM!
I am so obsessed with my new food dehydrator! I can’t stop dehydrating food! I love buying dried fruits but its hard to find fruits without added sugar. Right now I have strawberries and peas dehydrating! Above is blueberries, tomatoes, grapes, apples, and pineapples!
It took me 365 days to finally feel happy in my own skin. It wasn’t easy but it did pay off. On the side of my blog I will be creating a new tab called “The 365 Day Challenge”.

Last night Jeremy and I had a pizza night! Instead of ordering delivery I stopped to get ingredients to make a healthier pizza. I found a healthy crust that was only 140 calories. It tasted pretty good!
Hands down the best pizza sauce I have ever tried from the store! We cut up tons of our favorite pizza toppings. Spinach, jalapenos, pineapple, onions, pepper and tomatoes.
Yum!! The best thing about making home made pizza is the left overs!
I’m a coffee lover, obsessor, and couldn’t go a day without it. I’ve tried to quit plenty of times but I always fail. It’s not necessarily the feeling of caffeine but its the taste and the warmth. I have coffee in the morning, in the afternoon and after dinner. After dinner I usually drink decaf so I can get a good nights sleep. I found Irenes Bakery Biscotti at Whole foods a couple months ago and love having it after dinner as a dessert with my coffee. There are several different flavors too! Im working on coming up with my own 20 calorie recipe for biscotti right now ,because if I keep buying these my bank account will take a hit.
It can be dangerous to walk into a coffee shop having no knowledge of nutrition, some coffee drinks haves tons of sugar and unhealthy fats. Some drinks available at most coffee shops range between 400-800 calories! That’s way too much for a drink. If I’m not in the mood to order a coffee with half/half I usually order a tall (small) Northern Lite Latte from Caribou! If you are at Starbucks it’s called a “Skinny Latte”. At only 90 calories it has 10g of protein!
Eating healthy can be sneaky. Restaurants offer tons of healthy options, but sometimes we overlook them and go for the green. Last week I was at an Italian restaurant and was unsure what to order. I didn’t want to go overboard on the carbs and I wanted something light. I ordered a citrus salmon Caesar salad. The waiter came back with a medium sized salad drenched in dressing (after I asked for it on the side, but I never have the heart to say anything) greasy salmon, I didn’t even know I salmon could get greasy! The cheese was piled high and there was more home made butter croutons than lettuce. I knew right away that this was very unhealthy, I looked on the restaurants website out curiosity and was shocked. That Caesar salad was 1100 calories! That’s way too much for a salad. The spaghetti and meatballs, seafood ravioli, and chicken fingers were fewer calories. A lot of people who are dieting are fooled by the term “Salad”. I decided to create a healthier version of the salad for dinner the other night and it tasted amazing without all the extra junk.
3.5Oz Salmon Fillet
1 Tsp Lemon Pepper
1 Tbsp Fresh Squeezed Orange
1 Tsp Lime Juice
1 Tbsp Chopped Green Onion
1 Tbsp Brown Sugar
1/4 Cup Fat Free Croutons
3 Cups Romaine Lettuce
2 Tbsp Reduced Fat Parmesan
1 Tbsp Caesar dressing (On the side)
Preheat over to 350.
In a oven safe bowl, place salmon on top of layer of tin foil.
A couple weeks ago my mom came to visit. We took a walk downtown catching up and gossiping about everything a mother and daughter could. The sun started to beam down and we were craving something refreshing and sweet. We walked a couple more blocks and came to a yogurt shop. It was adorable and quaint planted right by the train. We couldn’t resist so we headed across the street. The inside was so colorful and fun. I couldn’t wait to make my yogurt, I’m such a kid at heart when it comes to toppings and whip cream! I stood there doing a couple spins to look at all the yogurt flavors, then I remembered I don’t have to pick just one, so I headed over to the first wall. I added 1oz of cupcake yogurt, 1 oz raspberry, 1oz chocolate, and 1 oz peanut butter. Next was the toppings bar, drool! I wanted to keep it a little healthy but at this point I didn’t care I walked 5 miles and was ready for a treat! 1 added 1/2 piece of Reese peanut butter cup, sprinkled some coconut, dark chocolate chips, pineapple, mixed berries, almonds, a waffle cone chip, and finally my favorites whip cream and sprinkles! Does it get any better than that!?
Sunday night Jeremy and I had just got done playing basketball. We love finding fun ways to exercise. We made large salads when we got back to the house and Jeremy grilled up some asparagus. Oh my gosh was it good. It was so addicting. I have been craving it every day since then! As soon as this budget week is over I’m making Jeremy grill up a bunch! It almost tasted guilty. All he did was add a Tbsp of olive oil, tbsp sesame seed oil, salt, pepper, and sprinkled a little Parmesan over the top after grilling. I’m not a grill expert and I wouldn’t dare touch the grill, I always fear that I will start a huge fire. But if you are good at the grill I do recommend trying this out! Asparagus is one of the healthiest vegetables. It has about 3 calories per spear, contains no fat, no cholesterol, low sodium, high potassium, high fiber, and strengthens your capillary walls with the amount of rutin.
Yesterday went well on the first day of my budget eating menu. I didn’t have the time to work out so my calorie amount was sufficient. If I would have spent time in the gym I’d add a couple hundred extra calories with olive oil or peanut butter. At the end of the day I was feeling full and didn’t have cravings.
The good news is that the salad is mostly organic. The cashews, feta and grapes are not.
Ian was very interested in the food, asking what it was, loving the colors, and he wanted his own salad. I was making it at 7:30 or so in the morning, so gave him a little bowl full of grapes for breakfast—he didn’t even ask for his normal Nutri-grain bar!
It’s hard to eat healthy on a budget. I realized that after I tried to plan out a week menu with only thirty dollars. I managed to do it but I’ll be eating lots of left overs and lots of repeated meals. The cost of fresh foods makes incorporating them limited but eating in moderation saves a lot of money.
I chose Walmart for my groceries because they match any price. Today, they also had a lot of good deals in the store.

If you find chicken that is a little bit closer to the expiration date it is cheaper. If you know you will be using it this week why not buy it?

I went a little over but I was too happy with my purchases to take it back. I guess Grumples will just have to have one less treat this week :)
I was at a get together the other night and I noticed how everyone was going for the fruit pizza. I love fruit pizza but the sugary cookie crust and sugary cream cheese doesn’t allow you to eat a large portion without getting a sugar crash. And who can stop at one slice?
It inspired me to create a new snack idea! I took a plain unsalted rice cake and added 1/4 cup of strawberry yogurt, and topped it with fruit! The dessert ended up being 65 calories! The thick cut fruit and thickness of the yogurt filled me up fast!
After my silly zumba work out I had a light dinner. I like to eat more calories during the day for energy instead of later in the night. I had steamed broccoli, steamed cauliflower, rice cakes, almonds, and shrimp. I forgot to add a picture but I had a 100 calorie ice cream sandwich for dessert!
For the Cauliflower and broccoli I steamed them in the microwave with a GLAD steam bag, then added a little salt and pepper.
For a little snack this morning I had a plain salt free rice cake with 1/2 packet of Almond butter! It was perfect with my coffee. I love buying Almond Butter in single servings. It helps me from spreading the whole jar! This was only 135 calories!
I know money doesn’t grow on trees and when we are all on budgets it’s harder to afford healthier options. The rest of the week I’m going to do some research and find out how to eat completely healthy for 7 days on a $30.00 budget. I’m going to be coupon digging, price comparing, and searching for recipes that use cohesive ingredients! Let me know how you stay healthy on a budget and I’ll try to incorporate your tips!
