This was the perfect quick breakfast for my busy schedule. It was already flavored, portioned and put into a to go container for the drive.
Sometimes I am to lazy to boil a pot of water or I simply just don’t have time so instead I use my coffee maker as a quick fix! Just don’t forget to take the K-Cup out first. I’ve done that so many times and hopefully I’ve learned my lesson.
I loved that the container was made to go because my hands didn’t burn after adding the hot water! The lid kept the oatmeal warm for an hour and I didn’t have to worry about remembering to bring the container home, all I had to do was rinse and recycle.
If the oatmeal doesn’t sound good already you should try it! It almost felt like a dessert! The cherries were giant and tasted like cherry pie. I am also a huge fan of almonds and pistachios and it was the perfect addition to this oatmeal!
This oatmeal kept me full until lunch and curved my cravings! It has tons of great nutrients that sent my energy way up! Everyone needs a little sugar in the morning to get a boost and by the time lunch rolls around your body has already burned the sugar. I can’t wait to try more flavors! Peach tomorrow!?!

Today was rough, one of the worst days I’ve dealt with in a long time. All day I’ve been asking myself what can I do to make myself happy? I thought of all the things I would change in life to reach that goal and it all seemed pretty simple. Then I analyzed it too much and found it to be one of the hardest things to do. I then began to feel bad, was I being selfish? Only thinking about my happiness and no one else? Then I remembered that in order to help others become happy , you have to be happy. We all have imperfections and some more than others and if we are constantly trying to be the best it kills the fun and makes life a pain. I’m good at things but I’m also horrible at things. I struggle in school and I can’t seem to enjoy class beyond the second day. I dread waking up and going because it’s difficult for me. I wasn’t blessed with the brains like my brother or my dad. (Sorry Mom) I wasn’t first at anything in school and I had lots of achievement classes that I was embarrassed of. Hell, I’ll have 100 notes commenting how bad my grammar and punctuation is. I grew up next to a girl who was Miss brains and I constantly tried to be her which made me unhappy because I had to face it, I was never going to be her. I sit in class and stare at something for 2 hours straight forgetting where I am, when class is over all I had accomplished was picking out my bedroom colors or cupcake flavors. School doesn’t make me happy and I’m not good at it which doesn’t give me the confidence to like it. So why not quit if it makes me happy? That’s where the analyzing began. Every cause has an effect and every bit of happiness has a consequence. If I quit my job how will I pay rent? If I travel the world how will I afford places to stay? If I quit school where will I end up 10 years from now? It was too frustrating to think about so I wanted to focus on the good in my life. I have a family who would do anything for me no questions asked, I am one of the lucky girls who has a boyfriend that means the world to me, I don’t struggle to afford rent or food, and I’m safe. Not many people can say that and I’m truly thankful. So, I realized at that moment I am happy but it’s so clouded by confusion and anxiety that I’m losing my happiness slowly. My mom had called me during my little therapy session with myself and I was explaining how I had been feeling lately and she nailed it. She said “You’re living for the future and not for the moment”. Living for the moment doesn’t take analyzing and fear of the unknown. I decided after that phone call that today was the last day I lived in fear of the unknown or lived doing things that made me feel unworthy. I obviously cant wake up tomorrow as the person I want to be but I can take what I learned and grow from it. I’m going to make baby steps to get there but I needed a plan so I wrote 10 things on a piece of paper that I wanted to achieve this year:
1. Stop saying “I can’t” because it never got me anywhere.
2. Stop caring about what others will do or think. Only my opinion matters.
3. Find a job you love more than sitting on a couch watching Jersey Shore (Can anything get better than that?)
4. Remember that it’s my life that I need to live and not let anyone live it for me.
5. Be brave and just do it. Taking chances can only make you stronger.
6. Smile more often and find people that make me smile.
7. Never be afraid to cry.
8. Find myself. Sometimes we lose who we are in life and if we don’t stop and catch up we’ll lose everything we ever had.
10. Don’t forget to love as much as you can and give so much love your heart hurts.
Life is so precious but it’s faster than lightening and can be taken away at anytime. I don’t want to die with regrets or die unhappy. I want to live life to the fullest even if it is only two more years or a hundred. I’m not going to read through this or correct anything because I know I’ll have the urge to delete it. I’ve been sitting on the balcony watching the moon, observing people walk by and cuddling with my puppy. Right now I’m in a happy place in a happy moment. I want every moment to feel this way and as a human being it’s my right and I’ll fight until I find it.
Yesterday I spent a couple hours at a local farmers market and bought tons of fresh vegetables and fruits. The prices at farmers markets are so much cheaper than stores and most of the products they offer are organic. I wanted to incorporate some of the fruits in my breakfast this morning so I sliced up some strawberries and added them to my fiber one cereal and added a 1/2 cup of blueberries as well. Now I need my coffee!!!!
Dice all the fruit into tiny little pieces. If you have a food processor you could blend it all together as well.
Dip the spring roll wrapper into warm water and lay it flat on a plate. Add cottage cheese, lettuce and fruit.
Drizzle 1 Tbsp of honey over the fruit, lettuce, and cottage cheese.
Roll it all up tight.
Drizzle the remaining Tbsp of honey and cut in half. This is definitely a wrap you wont want to eat with your fingers unless you have wet wipes on hand! This a perfect and refreshing option for the hot days this summer!
Hello Friday!!!!! Today I grabbed one of my to go containers and threw together a fast salad. I bought this container at target during Christmas time, I actually think it’s for organizing ornaments but o well! I packed 4 cups romaine lettuce, croutons, craisins, grated Parmesan, cottage cheese, chow mein noodles and a side of dressing. I made my dressing with Chobani yogurt and ranch mix. I love large salads like these they are so filling and keep me energized for the day! Any weekend plans!?
Had my favorite restaurant the other night with my friend Anna! The Ghengis is my favorite because you get to choose anything and everything! In my bowl I had carrots, broccoli, pineapple, shrimp, 2 egg whites, green onion, snow peas, onions, peppers, water chestnuts, squash, zucchini, garlic water, and a little honey soy! After my delicious healthy dinner we went out for a walk around the town and indulged in home made ice cream!
Half way through the week! Today I was in a rush so I through my lunch together really fast. On the bottom left I have 2 cinnamon rice cakes with a couple dark chocolate candy melts. On the top right I have cut up watermelon. On the bottom right I have Orzo with 1 tbsp of olive oil, baby spinach, and 1 tsp of garlic powder. Above the Orzo I’m having a hard boiled egg and left over grilled asparagus. I chose a light lunch because tonight I’m making healthy vegetable lasagna!
Time for Tuesday! Today for lunch I’m having a fresh tropical fix! On the bottom left I have a pineapple-berry sandwich. I took two slices of whole grain bread and added no sugar added blackberry jam and sliced pineapple. To the right of my sandwich I have 1% cottage cheese with a tbsp of craisins. On the top right I have 1 small honey-crisp apple sliced. To the left of my apples I have broccoli, for my dipping sauce I used 1 tsp ranch powder mix and 1 1/2 tbsp of plain fat free Chobani. I was super excited this morning to pack my lunch in my new fancy shmancy lunch box from Laptop Lunches. This lunch box has little containers inside that come with lids so I never have to worry about spilling again! It is also dishwasher safe so I don’t have to hand wash anything (Yay for being lazy) It has different sized portion containers that help me pack a nutritious meal. There are tons of different styles and I can’t wait to get more!
Here is my lunch for today! I love how colorful everything is especially the lunch box. On the top left I made a little side salad with romaine lettuce, craisins, Parmesan cheese, chow mein noodles, and Panera’s Asian dressing on the side. Underneath my salad on the bottom left is leftovers from dinner. Jeremy and I made healthy spring rolls with grilled asparagus and I’ll be posting the recipe after work tonight. On the bottom right is diced cantaloupe, my favorite! On the top right is my sweet container filled with 5 Wilton candy melts and three cinnamon graham crackers!
Here is my refreshing mid morning snack! The weather is so hot today and I’m about to go take a swim! I cut up 1/4 of a grapefruit and crushed it, then I added it to my plain fat free yogurt with 1 packet of truvia. I topped it with Fat Free Reddi whip, pink sprinkles and a couple grapefruit slices on the side! It’s a perfect protein fix.
The weather is beautiful out today! I sat out on the balcony this morning and enjoyed a cup of fat free Chobani yogurt with a tbsp of honey. I topped it with a couple slices of pineapple and sliced strawberry. This really hit the spot and will keep me until lunch.
TGIF! Today my lunch was so delicious! On the bottom right I have cheesy rice (1/2 cup broccoli cheese soup and 1/2 cup brown rice). My mom used to make this for me when I was a little girl and I loved it. On the bottom left is a cinnamon graham cracker with 5 milk chocolate candy melts and 1/2 honey-crisp apple. It’s Friday and I need my chocolate fix :) On the top I have romaine lettuce, banana peppers, 1/4 cup cottage cheese, Parmesan cheese, and croutons.
One more day till Friday! Yesterday’s water hydration plan was a success. I actually finished all my water by 3pm! Maybe I should add another bottle to the plan, or I’ll just see how today goes. Today I am a sleepy sleepy girl, I went to the Cubs game last night and didnt end up getting home until 12am. I definitely got my exercise running from one side of Chicago to the other with Jeremy, and blisters (why I wear flip flops is beyond me). For lunch today I’m having pizza slices made from 2 pieces of Village Hearth Whole Grain bread, Muir Glen Organic pizza sauce, Veggie Shreds Cheese and basil sprinkled on top. Underneath that pizza is a cup of steamed green beans. On the top right I bet you can’t guess what I’m having……….. it’s peas! On the top left I’m having my favorite, Chobani mixed with Mio and a couple honey-crisp apple slices. Have a wonderful Thursday!
While I was in Iowa My family and I had lunch at Charlotte’s in North Liberty Iowa. It was such a cute place with tons of yummy food. I ordered a vegetable wrap on tomato basil tortilla. It had cucumber, tomato, guacamole, onion, lettuce, cheese, mustard, and peppers. It was so delicious. My mom and I split some soup and a cookie with our lunch! If you are ever in Iowa I recommend stopping there!
Happy Wednesday! I’m so glad the week is almost over, I’m always looking forward to my weekends. Today is the first day of my “Hydration Water Plan” , hopefully it goes well and I can finally drink more water. I already have 2 cups of coffee in and I think I’ll make one more a cut off. It such a beautiful day I just want to spend all day outside with my dog. Why do we have to have jobs again?:( Anyways…..Today for lunch I felt like eating very fresh! On the bottom right I have 1/4 cup of cottage cheese, thee large strawberries and 1 tbsp sliced almonds. This taste so delicious if you cut up the strawberries and let the strawberry juice blend with the cottage cheese. On the bottom left I have 1/2 small cucumber sliced sprinkled with Parmesan cheese and 7 pieces of medium cooked shrimp. On the top I have 1/2 grape fruit sliced and my apple dessert wrap. For the dessert wrap I took a whole grain tortilla , spread fat free cream cheese , drizzled honey, added 1/4 cup chopped honey crisp apple and sprinkled with cinnamon. I love having these with fruit for breakfast as well, they really hit the spot!
As I sit here trying to come up with ways to drink more water I have a cup of coffee in my hand. I know the solution is pretty easy, just start drinking water. For me it’s not, I literally can go days without drinking water. I choose diet pop at restaurants, Powerade Zero during work outs, and coffee during the days. I sometimes wonder why my body even functions properly. I know there are tons of water in the fruits and vegetables that I eat but there is nothing like pure water. Lately I have been feeling pretty tired and have a lack of energy so I’ve decided to start drinking water to help my body. All of the important body functions and organs need water to operate so what are mine operating off of?
I posted a picture of a water bottle the other day on Twitter saying “trying to drink more” and thankfully Rachel tweeted me a picture of something similar to mine above. I thought it was an amazing idea so I decided to give it a try.
So starting tomorrow morning I’m going to start this plan of drinking 8 cups of water a day, everyday. I always wake up around 5 am and I’ve decided to make 5am -8am my coffee hours. I won’t drink ANY coffee after 8am (unless it’s weekend) The rest of the day I’m going to drink my water. I usually go to bed around 9pm-10pm so if I have water left I’ll make sure to chug it down!
Hopefully this plan will help me out a ton and I’ll keep you posted on how it’s treating my body.
Happy Tuesday!:) Well I definitely got more sleep last night than the night before, but I’m still so tired. I’ll just have to keep trying to catch up on sleep. Today for lunch I’m having a breakfast salad:) Remember the salad I posted yesterday? Well, this is basically the same salad but scrambled with four egg whites. It is SO tasty! :) On the Bottom right is 1/2 of a large banana with 2 large strawberries. On the top left is Chobani Yogurt mixed with tangerine Mio and a couple raw almonds! Hopefully I’ll have enough energy tonight to get in a nice jog with Grumples. It’s beautiful out today:)
Sorry it took so long for me to upload my lunch! I have had a crazy day and am finally getting a chance to relax. Last night I didn’t get back into town until 3am and had to wake up at 5:30am for work! That is so unhealthy and I really felt it today. I fought to keep my eyes open, my body craved sugar to stay energized, and I had a piercing head ache. I made sure to drink tons and tons of water and now I’m already in bed about to snooze off. For lunch today I made sure it was full of energy and healthy foods. On the bottom I prepared a little salad with spinach, cucumber, blueberries, cherry tomatoes, feta, broccoli and almonds. The top right is plain Chobani and of course I’m on a Mio kick so I had some in my purse to add to my yogurt. There is a tiny pear slice next to the yogurt, I had to fit it in there somewhere. The top left is a little wrap with tofurky (vegetarian turkey), american slice cheese, spinach, 50 calorie whole grain tortilla, and cherry tomatoes rolled up and sliced. This lunch definitely gave me energy for a while, but it’s sleep that will cure my fatigue.
It’s hard to believe people eat like this everyday! This is a burger and fries from Five Guys restaurant. I’m sure there are ways to cut the extra calories out of this meal but when people have the intentions of going to these places they don’t have any intentions of eating healthy. America needs to take control of what they are offering.
1. In another small mixing bowl combine all dry ingredients.
2. Mix together all wet ingredients with butter, slowly mix in dry ingredients
3. Preheat oven to 350 degrees.
4. In a cupcake liner add batter 3/4 full.
5. Bake for 7-10 Minutes.
-Take a spoon and scoop out 1 tbsp of the cupcake center center
-Fill the Cupcake with 2 tbsps of whip cream.
-Top the cupcake with another 2 tablespoons of whip cream
This is a perfect dessert when you are trying stay healthy and fit. The cupcake absorbs the whip cream and it really taste just like a Twinkie! I love making cupcake singles that way I don’t eat all the cupcakes! Another thing I love doing with this recipe is adding fruit!
Thank goodness it’s Friday! I can’t wait to go home this weekend for Mothers Day! I made a light lunch today because I know I’ll be enjoying Mom’s home cooking tonight! On the bottom of the lunch container is a broccoli slaw salad. I’ll post the recipe later tonight when I get off work, but it’s basically just broccoli slaw, broccoli, craisins, chow mein noodles, dates, sunflower seeds, water, and truvia. On the top right is Chobani and Mio with 2 tbsp of tropical trail mix. I love adding trail mix to my lunches because not only does it give me energy it helps with my sweet cravings. On the top left I have a peach salsa with a toasted 50 calorie tortilla.
Last night for dinner I brought home a large salad from Whole Foods for Jeremy and I. I added broccoli, craisins, curried carrots, croutons, cucumbers, peas, peppers, onions, and romaine lettuce. There was a little left over so I threw it into my lunch container. I added a little cottage cheese as well, lately I’ve been using it as my dressing, plus it adds in more protein. On the bottom right is a peanut butter and jelly sandwich, but not your typical peanut butter and jelly. I used Village Hearth bread, Pb2 Powder, and No sugar added jelly. It tasted exactly like a regular peanut butter and jelly just 1/2 the calories and fat. I bought the jelly and Pb2 Powder at Whole Foods, so people who don’t wish to use additives can find it there as well. On the Top right I have a small honey-crisp apple, and a single serving of 100 calorie black soft licorice. I can’t wait to dive into this at lunch.
When all your friends want to go out to a place that sounds impossible to eat healthy at , try to alter the menu to make it work. Who cares if the waitress hates you for it, it’s not her body and it’s your money. I’ve dealt with tons of waitress’s rolling their eyes at my menu changes but it never ruins my day. The worst thing about eating healthy is some places don’t offer obvious healthy meals, but you can easily make them healthy by applying what you already know. Don’t skip going out with your friends and family because that’s a part of life, you don’t have to eat what they eat. If they give you a hard time it may be because they wish they had the will power and motivation to be as healthy as you. Above I knew that Caesar dressing is about 190 calories in 2 Tbsps and they gave me about 1/2 cup of it. I ordered it on the side instead of having them drown my salad in it. Instead of having breaded chicken or steak on my salad I went with grilled salmon. Salads can be worse than a pasta entree or pizza if you are not conscious of how it is prepared.
I must have been feeling pretty colorful when I prepared my lunch today, or maybe it’s the weather change! The past couple days have been rainy and dull, but I woke up this morning with the birds chirping and the sun beaming through my windows. My lunch today is kind of tropical and summer themed. On the top left I have a couple slices of dried pineapple, dried peaches over banana cream pudding (prepared with unsweetened almond milk) and sprinkled with ground cinnamon. To the top right I boiled mixed lentils in vegetable broth and sprinkled a little garlic powder and pepper on top. The lentils are great for fiber and protein and really keep me full during the day. On the bottom I smeared fat free cream cheese on a whole grain rice cake, then drizzled light raspberry vinaigrette and topped it with sliced almonds. I laid the rice cake over a bed of romaine lettuce just in case I want to turn it into a salad.
