Made the cereal bars from the recipe from undressedskeleton! We didn’t have any cheerios so I used kashi heart to heart. Same difference though. They look so yummy!

yum! awesome idea from www.undressedskeleton.tumblr.com

“i tried your idea to mix half the sugar free jell-o with chobani and its soo goood! i mixed lime jell-o with strawberry chobani and it tastes like one of those delicious, yet sugary and unhealthy, drinks from restaurants. but its healthy!”

I made the Fruity Frozen Yogurt Cups for my best friend’s 18th birthday dinner as a healthy dessert. They were so delicous and adorable and the best part was how simple it was to make, considering I am not a chef in the kitchen. I used Yoplait Light Very Vanilla yogurt (which tastes even sweeter when frozen!) and topped it with her favorite fruits, blueberries and bananas. She and her family/guests loved them! I was shocked at how unhealthy they tasted, but really it was a sweet alternative to the brownies and pastries that were out too. I was even asked for the recipe from one of the guests and they were surprised at how simple it was to make that she was going to make them for her book club the following morning! I was very happy to have inspired others to make healthier choices. I now know what dessert/snack I will be bringing to family parties this summer! 13 calories per cup? Who can beat that?! :)

Then I’d like to thank you for all the recipe you put online, especially the muffin and cookies ones, I loooove to cook and bake cakes and all those stuff but it’s mainly for my family because of all the sugar and butter I have to put in it….

And here is a picture of my yesterday’s lunch :) (wakame salad, lychees, green tea)

My twist on your grapefruit lemonade

I grapefruit juiced

1/2 lemon juiced

Diet tonic water

large glass of ice

Adding the tonic water gives it a nice bubbly taste and is so perfect for a healthy summer cocktail

Just wanted to say that I love your tumblr, you are a huge inspiration and a big help to my own weight loss! I could spend hours reading all your recipes and tips! I cooked your pineapple salsa and pineapple chicken tenders tonight, my family loved them and they were super delicious! Good with each other, and the salsa was delish with tortilla chips too. Thanks so much for putting your story out there and helping the rest of us. :) Will deff be trying more of your recipes.

I’ve been following your blog for a while now, I have to say you are a HUGE inspiration for me. I’m sure you get that a lot, but from the deep down bottom of my heart I meant. We’re about the same height (I’m 5’6”) and had about the same starting weight (I was actually at 223 in January) today I weighed in at 200 lbs! I know it’s not huge, but to me I feel amazing. Losing weight has been hard for me, because when I was in high school I weighed around 140 lbs, and throughout the years my weight just took off. I tried to lose weight before, two years ago I got down to 175 (and NOT the healthy way) and sure enough I wasn’t able to keep it off. With the help of your blog, it’s been so eye opening that OMG, guess what I CAN EAT and LOSE WEIGHT!
I’m hoping one day I can be where you’re at, I’ve been going to the gym and eating right so I guess it’s just a matter of time.
Thanks for everything, keep doing what you’re doing and know that you’ve touched lives in more ways than you can imagine!! If you feel inclined you can keep in touch with me :) I’ve also made a sparkpage if you wanna check that out!

Here’s a link to my blog, the last entry was were I featured your pineapple chicken skewers, delicious!!

Also on tumblr I’m your follower, I’m vitabread :)

THANK YOU! <3

I made your vegan soup recipe!!! It was so good, my entire family loved it and all my friends are begging me to make more :)

I loved your “Cutie Fruity” Idea with the jello on fruit, and feeling inspired by absolutely everything on your blog, i decided to try it out myself! I didn’t have any grapefruits or lemons, but I had oranges that weren’t exactly sweet yet, so i sprinkled some orange jello on them and they taste AMAZING. So perfect for when my sweet tooth starts to kick in! Thanks so much for the idea :)

I made your snickerdoodle cupcakes for my birthday today!!! DELICIOUS!

Time for a change

I stupidly tried to OD the night before last, although luckily the sleeping tablets kicked in before I could take anymore. It has woken me up to the fact that I have to live and so may aswell do so as healthily as I can. Sooo….. I’m going to make my new healthy (with some restriction) diet plan. I got sent home from work after an hr and a half today as they said I looked too ill (cheers!), so I can my plan today. I’m going to use the help and advice from http://undressedskeleton.tumblr.com/ who has some great tips etc for healthy living whilst losing weight still. Time for a fresh start I think. Who’s with me?

http://lizzie—rose.tumblr.com/

Here is a link to my blog. I have just tried out your spinach roulade and it looks nothing like yours ha ha. Mine looks pretty nasty to be honest… but it tastes good! Thanks for the recipe. I’m going to try the stuffed mushrooms next. xxx

The muffins! They turned out pretty well but I will be using less honey next time. Maybe I made a mistake converting into metric units… Oh well…!

Thanks to undressedskeleton for the recipe!

I just finished making your healthy banana chocolate chips muffins. Here’s the result: http://sessantuno.tumblr.com/post/5802375888/the-muffins-they-turned-out-pretty-well-but-i

Submitted by readytostartliving92: Meringue Cookie Recipe!

200 degrees

Serves about 50 cookies

Ingredients:

3 large egg whites, at room temperature

¼ teaspoon cream of tarter

1/2 cup sugar

½ teaspoon vanilla extract*

*You can substitute any extract that you desire (ex. almond or cherry).

Separate one egg at a time into a small bowl, letting the white fall into the bowl and discarding the yolks. If there is any trace of yolk in the white, discard the white and start over. If it’s yolk-free, transfer to a clean medium mixing bowl. Repeat with the remaining 2 eggs.

Add cream of tarter to the whites and beat with an electric mixer on medium-high speed until soft peaks form. Slowly add sugar, about 1 tablespoon at a time, until all the sugar has been added. Continue beating until the whites are stiff and glossy. Add vanilla and beat for 30 seconds more.

Position racks in the upper and lower thirds of the oven; preheat to 200 degrees. Line a large baking sheet with parchment paper. Place a small amount of the meringue under each corner of the paper to secure it to the pan. Fill a 1-quart sealable plastic or pastry bag with the meringue. Seal the bag almost completely leaving a small opening for air to escape from the top as you squeeze. Snip off one corner of the bag with scissors, making a ¾-inch wide opening. Fold the top of the bag over a few times, than gently push the meringue down to the snipped corner. Working with the bag perpendicular to the baking sheet, pipe the meringue into 1 1/2 –inch diameter cookies, spacing them about ½ inches apart. Bake the cookies until dry and crisp throughout, about 1 ½ hours and enjoy!

These cookies are my favorite! They provide me with a cruch and satisfy my sweet tooth :). And Its great because they are only 10 calories for each one. While they dont provide me with a full feeling I dont feel quilty eating them.

* Note: Do not subsitute Egg White with boxed egg white. It will not work (tried and failed)

*Note: Do not substitute granulated sugar with a sugar substitute. Again it will not work (tried and failed)

I just want to thank you for making this blog. You really have truely inspired me to restart and change my life!

Hi,

I tried your snickerdoodle cupcakes today! They’re great!! I used land o lakes light butter instead of regular butter which saved a lot of calories. The recipe also made a bit more cupcakes than expected. I doubled the recipe and ended up with 42 cupcakes (instead of 36) and a total of 90 calories per, topped with 1 tablespoon of the sugar free frosting for a total of 140 calories! I made a few with flowers for my bday and the rest in a flag for memorial day.
My tumblr is piecesinprogress.tumblr.com
thank you!

Thank you so much!! Everyone absolutely loved them and they kept me away from the bags of potato chips at my friend’s memorial day party. If you’d like to use one of the pics in your book I’d be so honored, you’re one of the most motivational people I’ve ever seen (and since I started following you last Monday I’m down 4.2 pounds)!
Let me know when pre-ordering is available for the book, I definitely want one of the first copies! Can’t wait to try more of your recipes!

Thank you!

Hey!    I tried out your recipe for Blueberry Health Muffins, and they turned out really nice. I substituted the toasted wheat germ with oats, but I don’t think it made a big difference. They’re so yummy, too. Thanks for the recipe,

This is kind of a blah photo, but I made your yellow cupcakes, following your recipe to the T! They were delicious, and very hard to stop after just 1! Thank you for sharing it! My next recipe to try is your ‘kitty chow’ one! :)

Making some carrot jello as shown on Undressedskeleton’s blog!

I can’t wait to try it!

http://inner-girl.tumblr.com/post/5929344045/making-some-carrot-jello-as-shown-on

I tried your Kitty Chow recipe, I have never had puppy chow or anything but this stuff is really good!
I used 2 2/3 cups Barbara’s Puffins Cinnamon cereal 2 tbsp Peter Pan Whipped Creamy Peanut Butter 3 tbsp Land O Lakes Light Butter with Canola Oil 1 small box of White Chocolate sugar free fat free jello mix 1 square of chocolate almond bark 1 tsp (1 serving is 3/4 tsp) of Truvia

Hey! I made your yellow cupcakes (at midnight..I really should be going to
bed...) and they are, of course, delicious! I know you like color and I do too
so I hope you like the rainbow frosting. It was a mess to deal with but it was
worth it!

Thank you for the recipe!

Here is my attempt at the Apple Cinnamon Granola Bars (when they were just going in the oven)! I also made the Kitty Chow but I didn’t take a picture… it was AMAZING!
I absolutely love your site!
Kitty Chow! SOOOOOO delicious, it takes exactly like regular Puppy Chow minus the guilt!

I love your blog! I've lost 35 lbs and have been stuck in a food rut. Thanks for
helping me get out of it! This is your frozen yogurt treat with sugar free
strawberry jello! Yummy!!!

Hey,I’m so glad I finally found a page with recipes of health food.Unfortunately, I’m not from US and can’t buy such things as you cook with (no non-fat dairy products, dressings, raspberry vinaigrette and stuff…) but at least I try to make it similar. Hey girl!
My name is Kat and I am seriously such a huge fan of your blog!! I read
it like 4 times a day! You're so inspirational because our stories are so
similar!! We are both the same height and almost the same starting weight! I'm
currently trying to loose around 50 pounds and I'm looking to you as my
inspiration!
Anywho, last night I made the carrot cake cup cakes and they are super delish!
My family loves them! I love your recipes!
Thanks again for being the bomb! Have a great Sunday!!

Just tried the Red Bean Chipotle Burgers that I’ve been meaning to make forever. They turned out really well! I don’t actually like chipotles, so I skipped those. Instead I added a couple extra cloves of garlic, some black pepper, and a little paprika. The final result was absolutely delicious.

I put it on a toasted whole wheat hamburger bun with a little mayo and some lettuce, but I think it would have been just as good plain.

they turned out awesome: http://latewossblog.tumblr.com/post/6239634283/

Im from england and very much enjoy your recipes and snack ideas ^^ Since I been eating more of the foods you promote i have felt better with in myself and my skin, hair etc just looks in better condition. Hi I’m ‘awannabee’ off tumblr and have been following you since i first joined. You are such an inspiration to me, I found a picture of you and your drastic, healthy weight loss and I have realised it’s not impossible for me to go back to my healthy weight, which i was beginning to give up on as my starving myself just wasn’t working as I’d just binge a couple days later. Now i am slowly losing the weight and keeping it off, so i just want to say… thank you!!! Here’s a picture of my first round of the Blueberry Health Muffins, the whole house loved them so have been told I have to make them again ha!

Thanks again x x x

I mixed crystal light lemonade powder with chobani 0% and it tastes amazing! i made two and put one in the freezer, it tasted like delicious lemon sorbet! Thank you sooo much for the idea!

much love
I was going to put this in your ask box, but it wouldn’t let me put a link. Here’s an inspirational poster I made for my room and bathroom. Thanks for the inspiration and all the help!
-Megan whimsicalrebirth.tumblr.com

I always loved popcorn as a snack but only put EVOO (extra virgin olive oil) and sea salt on top. This time I put some garlic powder with a squeeze of lemon juice. Your website has taught me that it is OK to snack. It’s not something that should make you feel guilty also not sure if people can tell but this picture is taken in my summer dorm room. It’s possible to eat well outside a cafeteria setting! Thank you

I made my own inspirational/goals flower! I put it on my mirror so I know what
I'm losing weight for and also WHO I'm losing weight for. Thanks so much for the
great idea!

Cassandra!

Your omelet recipe on your tumblr has helped me up my intake of leafy
veggies and tomatoes! I got so sick of the taste of baby spinach and now
I go through tubs of it weekly:3.

I used two handfuls, a handful of chopped baby carrots, 4 eggs with most of the yolk taken out so basically nearly 3 eggs (because I find certain parts of eggs gross haha) and a whole tomato diced on top of it:).

Thanks for the inspiration! Good luck with life <3

Almond Crusted Chicken Fingers

183.8 this morning

Last night I made the MOST delicious dinner! I tried the Almond Crusted Chicken Fingers from undressedskeleton. You have to try them; crunchy and yummy on the outside, tender and juicy on the inside.

Recipe found here: http://undressedskeleton.tumblr.com/mealsandrecipes

  • I crushed up the almonds by putting them in a bag and running a rolling pin over them. I then put almonds and spices in a gladware and shook it up to mix it together (no need to dirty up my food processor!)
  • I did not use the olive oil in the spice mixture
  • I used 2 chicken breasts and sliced them up rather than buying tenders

Hello! I sent you an ask about this, but then I found the page fun from followers! So I thought I’d send in a picture, too.
Again, these are frozen strawberries with yogurt, about 10 cal each.

and my diet blog is http://iwanttobepaperthin.tumblr.com/

The turkey and tomato panini is definitely my new favorite thing to make for
lunch. I skipped the cheese, but it's still full of flavor and tastes just like
a specialty sandwich from a shop. I will keep on making this as long as there's
turkey, tomato, and bread in my house!

Thanks for the recipe!

Your recipes are AMAZING!! I tried your pineapple salsa, your Healthy Banana Chocolate Chip Muffins and your evil apple salad  they are wonderful!!!!

You are a wonderful girl by helping others because i know lots of people that tried to pretend that they never went through a weight loss circumstance and they actually are rude to overweight people which is so sad,  but you are completely different and that’s what makes you even more special. Thanks for creating this blog!

Hello,

I absolutely love your blog and have been trying a bunch of your recipes lately. Tonight I made pizza muffins. I switched up a few ingredients for convenience, and my pan made 24 muffins instead of 18 but it all worked out. Mine ended up being about 42 calories each. Such a delicious snack! I attached a pic of the final product! Thanks for being such a wonderful inspiration!

Hello. Just wanted to tell you how much I enjoy reading your blog. I tried two of your recipes out. The Fast Raspberry Scones and the Orange Poppy Seed Muffins that are both in Better Breakfast! I make the scones for my grandparents for breakfast all the time. Instead of the sugar, I use splenda and using frozen berries works the best. Now I use a mix of blueberry and raspberry for them. The muffins turned out wonderful as well! Thank you so much for positive outlook on life and living healthy.
-MichelleHey. I love your blog! I follow it religiously! lol Your my Healthy Idol! I decided to make Your Apple Granola Bar but I used Oranges instead and roasted almonds (i didnt have apples) and I had to use normal sugar because I dont have splenda :( However, it still came out amazing! thanks for all the great ideas!
PS: Congrats on the book!Hey,I’m skinnyminniemeee on tumblr and I just made this poster (with a few pics of your success) for my inspiration.  You are amazing and I love your blog!xoxo,Emily

- Em

I made your golden green beans and they were awesome! I have been following your blog for about a month when I saw one of your pictures on a different site. I have made a pretty good bit of your recipes and they have all been delicious. However I just made a tumblr a couple days ago so now I get to see your “Fun from Followers” section, so I decided  to send a picture. You are so inspirational and I love your blog! You have inspired me to start taking my weight loss seriously and to stay with it . I went to the gynecologist about a month ago  and they had me fill out this sheet on diseases and things I was prone to bc of family and I have 2 grandparents with diabetes and both of my parents have high blood pressure so it really knocked me in the face how important it is to take care of myself ,plus I really look forward to having a family one day and I don’t want to have diseases and bad habits that get passed to them ya know. So between that and seeing your blog I have started my own weight loss journey.I have been doing so good, I’ve only been exercising and eating right for only about 3 weeks and I already feel better. It really keeps me going to look on your site and see all the advice and encouragement you give. I can’t wait for your book!, Kristen

I just made your blueberry muffins ( and added extra cinamon on Top) and they
are sooo good! Thank you so much for your Site you just made me a healthier
Person!

You are so inspiring, firstly! Thank you for the always positive words.

I thought you’d enjoy this salad I made for lunch today. I’m a vegetarian, so I made tofu with equal parts curry powder, cinnamon and parsley, then added carrots, chickpeas, a bit of avocado, sliced cherries, bit of tomato, green pepper, and a sprinkle of mozzarella.
IT was deeeeelightful!

Hope you’re having a lovely afternoon : ) Happy weekend!

Hi! I just wanted to let you know that I've been following your blog everyday and you inspire me SO much to get healthy! I started dieting when I was 147 pounds back in 2009 and hit a plateau at 125 pounds for a full year But since I have been following your blog for the past couple months I am now currently at 113 and it's all thanks to you and your ideas!! So thank you SO much for helping get back on track to a healthier lifestyle. Im actually starting to feel pretty again, and it feels so great :) You by yourself are changing lives of many young girls out there in such a positive way so please please don't ever stop blogging :) Sincerely, thatsnae.tumblr.com

Just made some Peanut Butter Syrup... AMAZING!!! I absolutely love it. I
used reduced fat peanut butter with sugar-free syrup and then dipped
celery sticks so I didn't add a lot of extra calories! I think later I
will make some fruit dip-- I'll send you a picture!! Awesome recipes!

Made pineapple salsa the other day :)   <3 Shannon

I made your cereal bars today!!! They were amazing. I didn't really have luck
with the making them individually method, so i just used like 4 cups of cheerios
and made it in bulk:) I used marshmallow creme too cause I'm vegetarian.

Love your blog girly! You are such an inspiration to me.

Hi! I saw your blog on Tumblr, and I just wanted to let you know that I think you are absolutely amazing! Such an inspiration!   Also, I wanted to share one of my favorite recipes with you! It is a great snack filled with protein.   ( I’ve attached a couple pictures, so you can see the outcome, etc.)   1 1/2 cups old fashioned oats 2 eggs about 1/4 c of milk 2/3 cup of nuts (any type) 1/2 cup of dried fruit (any type) 1/4 cup of seeds 1 tsp. vanilla add chocolate if desired   stir everything together, place on parchment paper, or greased pan then bake at 375 for about 40 minutes. Let cool on cooling rack   These are great for breakfast, snack, and even dessert if you add chocolate! I love them, and they give me alot of energy, to boost me through work outs, and life; which is the greatest workout of all.   Also, my little cousins love them! They are fun and easy to make with kids, and are deliciously crunchy once baked.
Thanks again for sharing your story,  Rachel

I made your pizza muffin recipe and fell in love.  So did my whole family!  I love what you do and you’ve been a huge inspiration through my recovery with anorexia.  I recently opened a baking blog (http://k-inthe-kitchen.blogspot.com/).  I have realized it is ok to treat yourself without restricting the next day or feeling guilty.  I want everyone suffering from a disorder to realize this.  Once I began to feel ok with eating something “unhealthy” in moderation every now and then, I realized my love for baking.  However, I still cook healthy foods for myself and family, which I also posted on my blog. Thank you for inspiring me <3tinylovely.tumblr.com

Hey!I’ve sent a couple of pictures to your website before so I figured I would send this one, too! I went to New York City today and made sure to stop by Dylan’s Candy Bar and buy some 100 calorie Dark Chocolate Bars! They are absolutely delicious! While there I split a small bag of dark chocolate almonds with my mom… so delicious! I absolutely love your site, and I look at it everyday! I LOVE all your recipes too. Thanks so much for all the help you have given me in losing weight healthily! You are such an inspiration.
Sincerely,Vanessa :)

Dear Taralynn,
Here is a link to a blogpost on my blog, in which I have done a recipe dedicated to you!http://lifewithagrainofsugar.blogspot.com/2011/07/play-with-your-food.html
I’ve been following you for a while now and make it a ritual to check your page everyday. While I’ve always been athletic and fairly healthy, I’ve continued to look for support on a healthier lifestyle. I’m now 3 years vegetarian, which is hard being a college student, but I am always trying my best to live life happily without depending on food as an emotional crutch. You touch the hearts of every one of your followers and I appreciate how you open your life up to change the lives of so many others.

I made www.undressedskeleton.tumblr.com’s recipe for Banana Nut Donuts. Super easy and fun to make! Instead of walnuts I used Almonds.

Check out her blog for fun and healthy recipes!

Thanks Taralynnnnnnnnnn!!

After looking at your Exciting Entrees section I decided to try your recipe for the Turkey & Tomato Panini.

Instead of mayo I used avocado and instead of Parmesan I used Swiss cheese and it came out tasting DELICIOUS. Even my Dad loved it! So much so that he asked me for the recipe and wants to use it in our bakery in Haiti. Thanks so much!

I made your Banana Chocolate Chip Muffins. They are delicious! My entire family loves them. Thank you for being such an inspiration. I’ve just started my journey to lose 100 lbs and your story is so inspiring. I am addicted to your blog! I can’t wait to try your Fast Raspberry Scones next.-Agata

Hey,
I’ve been following your blog for just over a week but in that week I’ve been so inspired and geared and determined, I’ve already lost 5lbs! I think it’s because my body has never been treated so kindly. I’ve been using your recipies pretty much every day and coming up with my own ideas as well. But this is something I’ve had twice this week because it was so yummy! The sweet potato fries (which still need some work to get them crispy) and the stuffed tomato - definitely a favorite.
I hope I keep this up, I haven’t been as happy in a long time as I have been this week.

I took a few shortcuts in the recipe because I didn’t have everything needed exactly, but they are still delicious! I added up all the calories in the ingredients I used and divided it by seven, and it came out to about 60 calories each as well!

Thanks Taralynn (undressedskeleton.tumblr.com) for the recipe!

Hey, I made the jello cubes and they were an awesome dessert! I attatched a pic.
Thanks for all the great ideas!

Today you inspired me to eat healthy :)
I made a omelet, only egg whites, with ham and lettuce for breakfast :)
Later today I'm gonna try your summer slaw and for dinner I'm making chicken
wraps. I'll send you a pic or link of how it turns out :D
Thank you for your blog, and I'll try even more of the stuff you put up! The
only problem is finding the stuff, since I live in Sweden and we don't have the
same stuff as you do :(

Mondays are my favorite because my dad takes me to the store to get groceries, and I always choose a recipe of yours to make. Last week, it was an omelet and yesterday, I made the stuffed tomato except I used mushrooms and cucumber without the ground pepper. It was so good!

Hey TaraLynn,
Here is a yummy breakfast meal from Switzerland! You could work out the calories if you want, but it’s 100% healthy. I took this photo of my finished product! This one is sprinkled with
and walnuts, but I left that out for calorie reduction.
Here is how to make Muesli for 4 servings. (It keeps well in the fridge for a couple of days, just stir before).

1 cup old fashioned regular oats (NOT instant, they will be mush)
1/2 good cup fruit juice (orange is good)
1/3 cup vanilla almond milk (unsweetened)
1 container of fruity greek yogurt ( I used mango Chobani)
    Juice of 1 lemon
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    pinch salt
1/4 tsp vanilla extract, or almond extract, or anything yummy

Stir up all of the above in a big pretty bowl and leave it in the fridge covered while you chop up the fruits (~30 mins) Cut fruits that will brown last. You can use cookie cutters to make the fruit cute!

1 large kiwi with or without skin (skin is good for you; I eat it)
    1 mango
    1 soft nectarine
1 cup pineapple chunks (doesn’t need to be fresh)
1/2 cup or more of seedless grapes halved
small can of mandarin orange slices
1 apple grated (remove skin first or it’s impossible) or chopped small ish
    1 med-large banana
Any other fruit you like :)

Mix those into the oat mixture lightly to coat them so the banana and apple doesn’t brown. If it’s too thick, add some more milk or fruit juice. Then add the berries so they are mixed the least because they will squish.

    handful of strawberries (quartered)
    blueberries
    raspberries

Mix and then you can decorate the top if you want.
Once you’re done, the oats will have soaked for about 45 mins so it’s probably ready to eat, but an hour from the time you mix the oats with the liquid and yogurt is probably best.
Have it with almond slivers, milk, and honey if you want extra pazzam! Yummmmm.
Again, this makes 4 servings, roughly 1 good cup per serving. It’s filling, has lots of fiber and protein and vitamins!
Feel free to share this on Tumblr. I love your blog! Keep posting!  xx

I take night classes during summer, so I usually don’t get home monday-thursday till after 10pm. I’m usually exhausted after a long day, so sometimes I make my dinner before class so I just have to reheat when I get home. Today, I made Colcannon Puffs. I tried one before putting them away for after class, and they are delicious!

(Pictures (left to right): mixing everything up, about to put them in the oven, turned them over and put them back in the oven, and then done)

Like everything I have been cooking lately, check out undressedskeleton.tumblr.com for the recipe!!

For dinner last night after class I made pineapple salsa, and put it in egg white bowls, it was quite good :)

Earlier today I went shoping with my dad and found that keso (cottage cheese) and kesella was the two things that would be kinda like what undressedskeleton.tumblr.com always use.
So I took a breake from cleaning to make myself something to eat. It’s kesella mixed with berries and a little keso. It is really yummy! I had flavored keso (apple & pear with vanilla), and it tastes great just plain.

undressedskeleton inspired salad <3

This is my undressedskeleton.tumblr.com inspired salad! I wanted to go with CRUNCHY CINN-APPLE SALAD http://undressedskeleton.tumblr.com/strikingsalads ) but since I don’t live in the US and I couldn’t find some of the necessary ingrediens, I’ve decided to change it a bit :) I used half of a medium peach instead of apple and added 25 grams of strawberry muesli instead of Apple Cinnamon Granola. I couldn’t find Raspberry Vinegrette, but I did find Strawberry Vinegrette.

Despite a few changes in the recipe, it was still delicious! Thank you undressedskeleton!

Tried out your popsicle idea with Sugar Free Non Fat Banana Cream pudding, and it was soooooo yummy and super easy.  Perfect for a warm night in Cali. (:  The popsicle mold I bought (for $4 at Target!) makes 4, and the pudding is 25 calories per serving, and there are 4 servings in each packet, so it worked out perfectly to 25 calories per pop.  Looking forward to trying out more recipes!

Majorcan Vegetable Bake

255kcals, 40.1g carbs, 10.5g sugars, 8.8g fat, 1.2g saturated fat, 0.2g salt per serving.

Serves 4

Ingredients:

  • 1 400g can chopped tomatoes
  • 1 tbsp fresh chopped oregano
  • 2 cloves garlic, chopped
  • 2 tbsp olive oil
  • 1 medium aubergine, sliced
  • 1 red pepper, deseeded and sliced
  • 1 medium onion, sliced
  • 650g potatoes, peeled and sliced

Preheat oven to 200 degrees celsius. In a pan combine the chopped tomatoes, oregano, garlic and 1 tsp of the oil, season and simmer over a medium heat for 10 minutes until thickened, tirring occasionally.

Toss the aubergine, pepper and onion in the remaining oil and season. Arrange the slices over an oven tray and cook in the oven for 10 minutes. In a litre ovenproof roasting dish, layer up the roasted vegetables with the sliced potatoes and tomato sauce, seasoning each layer. Finish with a layer of potatoes, and then tomato sauce. Cover with kitchen foil.

Bake for 45-50 minutes until the vegetables are tender and the top is golden (if your oven is not fan assisted then it may need more time), removing the kitchen foil half way through cooking. Leave to stand for 5 minutes. Serve with crusty bread and a salad!

Tried out that Chicken Pizza Tortilla. Might have over done it slightly on the goats cheese but I care not. Definitely going down as a favourite. Try it out!

Made pizza crackers for a snack earlier today. They were delicious to say the least!

Dear Tara Lynn (aka UndressedSkeleton)
I love sugar cookies, so when I saw this recipe I almost died! I absolutely love to bake, therefore I had to try it out and see how it worked. At first, I was a little skeptical because it was something new and I wasn’t sure if I could make them correctly. After they had cooled, I mixed sugar-free icing with red food coloring and quickly decorated the cookies. (I was too impatient and wanted to try them!) I would have had more cookies to show you if my entire family didn’t love them as much as I did! They’re delicious! Thanks for the recipe. (:
Much love!Emily (aka Foreverrrdieting)

You are such an amazing inspiration!! I love all of your creative recipes using jello. I’ve always hated milk so I thought I’d take inspiration from you and add my sugar free jello to it. I just put 1/2 cup of 1% milk, one serving of sugar/fat free black cherry jello powder, a couple teaspoons of calorie free sweetener, and ice. It’s only 65 and it makes quite a bit, plus it tastes awesome!!

Added a few more ingredients though. put yellow, red and green peppers and slices of tomatoes! It tasted like chips and salsa! :Dand instead of the tomato basil triskets i used the 61% less salt or sodium.

Hi Taralynn,
My name is Fouzia, (22, living in Paris). I discovered your tumblr 1 week ago and immediatly fell in love with it. All of the tips your are giving are very useful and I think it’s very kind of you to share your knowledge about healthy livestyle.  I have already tried  some of your recipes and they tasted absolutly amazing!!  Yesterday was my mum’s birthday so I decided to give a try to your ‘yellow cupcakes’ recipe since they are healthy and looked YUMMY! It was a success everyone liked them and especially my mother. So thanks a lot for sharing!
I have been on the healthy journey since a year right now and I have lost a huge weight off my shoulders  litterally! (99 lbs) but my best reward is that I’m proud to say,my sisters and my mom adopted my new healthy way of  life even if they didn’t have to loose weight.
I attached some pictures of my attempt at making your cupcakes, I know that they look kind of weird but they tasted good and for my defense I’m french so I’m more use to bake macarons.lol!
If one day you’re in Paris email me so we can grab a coffee and share some recipes!

Have a nice and lovely day.  Fouzia
Hi Taralynn!!
I made 4 of your recipes, and I totally love them! You and your blog inspire me everyday! You are my role model, and continue to do what you are doing!
I wish to enter the contest! :) The recipes I made are: Blueberry Health Muffins, Summer Slaw, Fiesta Bean Dip, and Savory Yogurt Dip! :) I also made the Raspberry Scones for my sister’s birthday 2 weeks ago, but I forgot to take a picture! :D They were a total hit though!
Take care!

Tonight, I made your Vanilla Pudding Cupcakes!
I was inspired by your recent post about Truvia…so I replaced the sugar with Truvia.
(Yes, sugar is more natural but right now I am working on lowering my sugar intake so I thought that this was best for me.)
I also used Unsweetened Almond Breeze instead of Low-Fat Milk, used Fat-Free Ricotta Cheese instead of Low-Fat Ricotta Cheese and used Fat-Free/Sugar-Free Cheesecake Pudding instead of Fat-Free/Sugar-Free Vanilla Pudding for the icing.
(I piped the pudding on top with a Ziploc bag! It worked fantastically and they taste incredible! I can’t wait to share them with my friend Kadie. (Her and I have been following your blog and sharing recipes!)
I want to thank you for your truly inspiring blog and very much hope for your book to be available over amazon so I can order a copy :)
Here is a picture of my JWOWW Long Island Power Salad - lettuce, cucumbers, beetroot (it makes it pink:)), and grilled chicken breast with a yoghurt dressing. Absolutley amazing and your The Situation Salad, Hamburger Salad and Sammy Sweetheart Salad inspired me to make a JWOOW one :)

Hey Taralynn,

Here is my entry for  your “Recipe Repeat Challenge”.  I baked your pizza muffins. They were a hit with my family. They ate them all before I could get a picture of the final product.
You are truly an inspiration to anyone wishing to lose weight and get healthy. I’m 21, and have struggled with weight my whole life. I have lost over 40 pounds and now have another 40 to go. I know by following your example and trying out all your fantastic recipes I will achieve my  goal weight.
Thanks for being so awesome and supportive to all your followers. :)
All the best,
Joyfulperfectionist

Ingredients:
3 cherry tomatoes, sliced
1/2 cup basil leaves
1/4 cup sliced red onion
36 g fresh sliced mozzarella cheese
1 Laughing Cow Light Mozzarella, Sun-Dried Tomato & Basil Spreadable Cheese Wedge
1 Flat Out Multi-Grain & Flax Flatbread
1/2 tsp Extra Virgin Olive Oil
sprinkle of pepper

Directions:
1. Lay the flatbread on a cookie sheet.
2. Spread the Laughing Cow cheese wedge in an even layer on the flatbread.
3. Arrange the cherry tomatoes, onions, fresh mozzarella, and basil leaves on the flatbread.
4. Drizzle the olive oil over the pizza and sprinkle pepper over top.
5. Bake in an oven at 450F for 10 minutes or until the flatbread has hardened.
6. Enjoy! You can cut it into slices to share with loved ones, or just keep it all to yourself! I seasoned mine with more pepper and also added garlic powder and crushed red pepper.

Serves: 1-2 people. 1/2 pizza = 150 calories, whole pizza = 300 calories.

Hey there :D
My name’s Elisa, I’m 17 and I’m from Germany. My tumblr username is skinnyelisa.tumblr.com (I’m anything from skinny but if I keep telling myself that I am, maybe I’ll become it some day ;P). I’ve been losing weight since March and I’ve lost a bit over 60lbs so far. Now, I’m always on the look out for healthy and still delicious foods.

Your blog is so inspiring, helpful and just plain amazing! When I saw the recipe challenge, I knew I had to take part. I never, ever cook or bake but I accepted the challenge on a hot sunday afternoon. I don’t think I’ve ever sweated that much in my life :PAnyhow, I made the Spinach Roulade, Cherry Tomato and Feta Salad and Almond Crescent Cookies for desert ;)
It took a while to prepare it all (especially because I had to figure out the measurements for everything [in Germany we don’t have the cup measurement]) but in the end it was so worth it! So yummy and my veggie-hating brothers loved the cookies ;)
I hope, I have somewhat of a chance and even if I don’t, I did my best :D

A few days ago, I tried to make your Granola Apple Cinnamon muffins. Unfortunately, I didn’t have all the ingredients at home,so I had to improvise a little bit. But actually, the muffins turned out absolutely fine! They tasted FANTASTIC! Thanks to your great recipes, I can make delicious meals and stay healthy at the same time :) !
Lots of love,

Hi Taralynn!
I’ve been following your tumblr for a while now, but never had the courage to e-mail you or anything big~But I just made this late-night snack and just HAD TO e-mail it to you! It’s inspired by your half melon and cottage cheese combination!
I cut half a white peach, chopped it, and added it to 1/2 cup of nonfat cottage cheese mixed with 1 packet of truvia and sprinkled with cinnamon! Then I had to add some toasted slivered almonds and chopped walnuts for some crunch :)You should try it to!
Keep what you’re doing!Hope to meet you one day Miss Best Inspiration!!

Hey Taralynn! I love flavored chobani yogurt, but you always talk about putting jello in it. So I tried it and I absolutely LOVE it! I’ve been trying to think of what to put in my plain yogurt because I didn’t like it just plain. I put sugar free strawberry jello in it, and it’s perfect! I think it’s my new obsession, haha. Thanks for the wonderful idea! Your blog is amazing, and you’re such a huge inspiration.

Since in the UK we don’t have Chobani Yoghurt, we have Fage Yoghurt instead, I decided to use some sugar free raspberry jelly and oh my gosh it was so yummy! really made me feel like i was eating something naughty when i definitely wasn’t! Thanks for the tip :) http://iwantmyoldjeansback.tumblr.com

Hey Taralynn!
I just wanted to let you know that I made your Blueberry Health Muffins the
other day and they were delicious! My whole family loved them! Thanks for being
such an inspiration! I truly look up to you.

Dear Taralynn

I just want to say thank you so much for your amazing tumblr page! You are such an inspiration. I’m trying to lose weight at the moment, and I’m finding it hard because I have chronic fatigue syndrome, making exercise hard. But whenever I look at your page, I know that by eating better and doing as much as I can, I will reach my goal. I’m English, and allergic to gluten, and I’ve been having a great time trying to adapt your recipes to suit what products are available here in England, and also using gluten-free alternatives. I’m hoping to start my own cooking/weight loss blog, and your recipies are so inspiring! I was wondering if it would be ok to post my own versions of your recipies to suit those of us who follow your blog but can’t get many of the products over here? I would credit you of course!

I am so thankful I found your blog - eating better is making my illness better too, and whenever I lose motivation I look at your wonderful recipes and great advice. Thank you so much! I hope I can get to a healthy weight soon! You are such a great role model and prove that losing a large amount of weight can be done by eating healthily, not starving yourself. I wish you so much luck and happiness, you deserve it!

Love,

Caroline

PS: Here’s two before and afters of me! I find your before and after page so inspiring, I wanted you to see how much you’ve helped me! There’s about a stones (13lb?) difference, hopefully there’ll be more soon! I put the after first, as I like to think the present comes first, the past comes second! Hope you don’t mind me sending these!

Hey Taralynn! I just wanted to let you know I tried your Ocean Swirl Cereal, but with cherry jello and it was delicious! I posted it on my blog, but here’s a picture for you! I called it Red Sea Swirl Cereal because of the color :)

Thanks for the recipe!
