The Night Before Vegan September
It’s Friday night and I’m super excited about taking on a vegan diet for the month of September. For the past month I have been researching products and looking for fabulous replacements for my recipes. I was feeling a little discouraged at first having to give up my favorite foods like : yogurt, salmon, jello, cottage cheese etc. It’s almost similar to the fear of giving up fast food, candy and soda when I first started my healthy lifestyle back in 2009. I eventually got over it and was fine, so I know I can do this. Plus, it’s only a month. After September I’m planning on eating vegan three times a week to continue building vegan recipes that are healthy. It’s going to involve lots of planning ahead to make sure there are always vegan options where ever I am. Today I made a vegan salsa and bought organic vegan black bean chips to bring tailgating. I also packed fruit and raw almonds to munch on. I plan on making a smoothie before I go, so I’ll post the recipe up asap! I’m going to try to post how my day went everyday and let you know if it’s getting easier or more challenging. I’ll most likely be taking all my questions to twitter during the day so I’ll need your help! Some of you have vegan dictionaries in your heads and hopefully one day I’ll have all that knowledge too. I know a lot about the pescatarian diet, vegetarian diet but not enough about being a vegan. I have crammed a bunch of information up there the past couple days so I’m hoping it’s enough to make it through this journey!
September 1st - Day 1
Day one was tough but I was preoccupied by activities, which is good. I had a great smoothie to start off my day and keep me less thinking about my usual yogurt or eggs. I don’t crave junk food which is helping a lot because most vegan food is healthy. Being prepared is going to be the one thing thing that will get me through the challenges. For lunch I had a bunch of avocado and bean dip with a handful of vegan black bean chips my brother bought me from a health market in Dayton Ohio. I had watermelon, almonds, apples and walnuts through out the day too. When dinner time rolled around I made a large salad with:
- 3 cups romaine lettuce
- 2 tbsp walnuts
- 2 Tbsp almonds
- 1/4 Cup Vegan Cheese
- 1/2 Bell Pepper
- 1/2 Onion Sliced
- 1/3 Cup Peach Slices
- 1 Cup Strawberries
- 2 Tbsp Raspberry Vinaigrette.
Having a large salad that filled me up to the point of not moving for five minutes really helped me forget that my salad lacked croutons, eggs and cottage cheese. Before Bed I had a cup of hot black tea (decaffeinated) which helped me fall asleep. Tomorrow I plan on making more meals from scratch because I’ll have more time :) Day one complete!
September 2nd - Day 2
Today has been pretty easy. I woke up and made delicious banana flax seed crackers to go with jelly, pineapples, almonds and walnuts for breakfast. I also had tons of coffee with unsweetened almond milk. I went on a nice long walk with Grumples and was getting hungry so I made crunchy taco chickpeas to give me a quick little fiber and protein fix. I’m still craving Chobani yogurt but tomorrow I’m going to Whole Foods to try and find coconut milk yogurt and some more vegan alternatives. Tonight I’m going to the drive in movies with Jeremy and we are going to bring a huge bag of Skinny Pop Popcorn, dried blueberries and raw almonds to snack on. For dinner I’m going to be making vegan tacos and I’ll post the recipe first thing tomorrow! Am I going to continue being a vegan after thirty days? Some of you think so but I’m not convinced yet…
September 3rd - Day 3
Today was a little bit more difficult. Breakfast started out great, I had: Chocolate chip oatmeal, grapefruit and almonds. After my workout I found myself feeling kind of weak so I had a handful of almonds and a cup of black grapes. The natural sugar and protein helped me with energy and cravings. I drank a lot of coffee today with almond milk to keep me from going back to the kitchen and my eyes from closing. I went to bed a little later last night so that may be the reason I’m feelings so tired and not the new diet. I think finding the balance between protein and carbs is a little challenging when it comes to being vegan. Does anyone else have this problem?For lunch I had a salad with: 3 Cups Romaine, Italian Dressing, Almonds, Walnuts, Sunflower Seeds, crumbled vegan tofu, shredded carrots, jalapenos and chickpeas. This was super delicious and I’ve never been one to enjoy tofu but it gave me a nice texture to the salad. This kept me for a long time. Around 6pm Jeremy and I decided to go play Bingo because we had never done it before and saw a bingo hall down the road from us. I actually won $50 dollars :) even though that’s how much we paid to play, at least we broke even. Those people really know their bingo and it as so fun to watch them get into the game. I don’t think we will be going back anytime soon. We got out pretty late and were feeling a little hungry and I hadn’t done any research on places to eat for vegans so I just told Jeremy I’d go wherever and if they didn’t have anything I’d eat at home. Of course he chose subway. I ordered a veggie delight salad which was just spinach, lettuce, tomato, onion, banana pepper and bell pepper. I had the sweet onion sauce as my dressing because most of the other dressings they offered contained animal product. I think the Italian was animal product free but I’m not a fan of subway’s Italian dressing. I also bought a little bag of apple slices to add to the salad too. I have been reading on the internet that some Subways around the U.S. have introduced vegan sandwiches, but the one I was at didn’t offer them. When I got home I was still hungry of course so I had a bowl of skinny pop, craisins and 1 tbsp of vegan chocolate chips. It was the perfect little bedtime snack. I actually had to stick my Chobani yogurt in the back of my freezer because it was staring at me and I just wanted to devour it! When I was hiding my Chobani out of my site I saw salmon chilling in the freezer, I slammed it and walked away. I’m laying in bed now and I feel very content and all cravings are gone. Hopefully my energy is higher tomorrow during the day than it was today. Any tips how to get your energy up without dairy and fish? I just feel like my body is craving them, but does it need it or want it? I’m off to bed early and will let you know how tomorrow goes! Hopefully it gets easier.
September 4rd - Day 4
Thank you guys for all the advice, it really helped me get through today. I reevaluated what I was eating and decided to add more grains. For breakfast I started out with a vegan tortilla toasted with peaches, almond butter and walnuts. I also had a green smoothie made with : 1 Tbsp ground flax seed, 1 Tbsp Whole Grain Oats, 5 Large Strawberries, 1/2 cup blueberries, 1 Cup Unsweetened Almond Milk 1 Cup Ice, 1 Packet Truvia, 1 Tbsp Almonds, 1 Small Banana, 1/2 pear and 2 Cups Fresh Spinach. This was one of the best green smoothies I have ever had! I went for a run about an hour after breakfast and felt great. I think eating a larger breakfast helped with the light head after my workout. For lunch I had a avocado half grilled on top of romaine lettuce with: peaches, chickpeas, sunflower seeds, tomato and chopped onion. I also had a baked sweet potato on the side. I was so full after that lunch and it kept me until dinner. For dinner I had vegetable kabobs and grilled corn. My late night sweet tooth rolled around and I had 1/4 cup sized bowl of vegan chocolate chips, raw almonds and craisins. Tonight was a lazy one, I sat around like a lazy bum watching Dance Moms and Teen Mom. Reality T.V. is kind of my addiction on Tuesday nights. I usually try to do some stretch routines and strength training while watching but wasn’t feeling it. Overall it was a pretty successful day and your tips really helped! Hopefully tomorrow will be good too!
September 5th - Day 5
Wow I have made it to day five! So close to a week. Can I tell you a secret? (I didn’t think I’d make it this far) But now there is no doubt I’ll make it all the way. Will I continue my vegan diet forever?….chances aren’t good. But I will cook 3 nights a week vegan. Some of you still think I’ll never go back but we’ll see. ANYWAYS…Today was great. I started my day out with an AMAZING muffin. This breakfast muffin was made out of pure luck, I had faith that it would turn out good but with the lack of ingredients it could end either way. I wanted to cut out most ingredients and use as many whole foods as possible. The muffins had no flour, no added sugar, no salt, no egg, no baking soda and no butter. It was also only 76 calories! I made a bunch and froze them to keep for snacks and breakfast throughout the week. Tomorrow I’m going to attempt a vegan pancake :) Before I had breakfast I woke up at 5 to do yoga for a couple hours. Today was stormy and really relaxed me and put me in a good mood all day. Some people dread rainy days and become all gloomy but I do the opposite. If the rain dance worked, I’d be on my toes every second. Did I just come up with a new work out?…Around 11 I had a glass of coffee with almond milk and a grapefruit along with it. By the way learn from my mistake, don’t eat a grapefruit before drinking coffee it’s like drinking orange juice after brushing your teeth! I went for a light walk at noon with Mr. Grumples and ended up running back because the rain started to pour and I knew with my luck my cell phone would get ruined. At 6 I went to the driving range and practiced my swings and burned a few calories. I didn’t end up eating dinner until 7pm. I had: a baked potato, grilled bell pepper, chickpeas and green beans. For dessert tonight I’m having banana walnut ice cream! I’ll post the recipe first thing in the morning. I must get back to my Giants Game! See you on day 6!
-September 6th - Day 6
Today was a great day. I finally feel like I’m getting over the cravings. I did find myself thinking about Chobani a couple times through out the day. It’s always my go to after work outs and I’m so used to having it. For breakfast I had one of my left over strawberry banana muffins . I microwaved it, had it with a large grapefruit, glass of almond milk and a 1/4 cup cashews. Around mid morning I had a cup of coffee and all natural peanut butter on a slice of vegan bread from whole foods topped with vegan chocolate chips (sunspire brand). That slice of toast really took away all cravings and kept me for until 2. I got a little hungry late afternoon so I made vegan veggie burgers with grilled avocado. I had strawberries and banana flax crackers on the side. I was very surprised by the outcome of the burgers. I pulled together everything grill worthy and blended it together. I was stuffed! I took Grumples for a long walk and worked on getting the house clean and organized. My parents are coming to Chicago tomorrow , I’m pretty excited :) For dinner tonight I’m going to grill a bunch of veggies and make a bake sweet potato fries! I also plan on eating air popped popcorn for the VMA’s :)
September 7th - Day 7
Crazy how one day you do great and the next you just wanna quit, but no worries I’m not! This morning I was craving an omelet with cheese and veggies but I had homemade granola bars and strawberries instead. I had a lot of coffee today because nothing is better than coffee on a rainy day. I did a long yoga session followed by 25 minutes of zumba early morning. I was busy getting things ready for my parents through out the day and didn’t have time to snack or have lunch until 3pm. I had a cup of steamed cauliflower and a veggie burger. About an hour ago Jeremy, my parents and I went to Portillos and I was hesitant but they had PLENTY of vegan options. I had the grilled veggie sandwich without the bread or cheese and a fresh garden salad with Italian on the side :) Right now we are all sitting on the couch watching movies and getting rest for football Saturday!
September 8th - Day 8
Football Saturday! Even though my Iowa Hawkeyes lost I had a good day with my parents. Early morning I had macadamia nut coffee and unsweetened almond milk. Coffee taste so much better when you have someone to “coffee talk” with. I also had vegan bread with almond butter and jelly. Around noon my mom and I went shopping on Michigan and had an amazing time. I bought too much to carry from Lush. My friend Cait got me ADDICTED to their products. They really know how to sell their stuff, my hands are still smooth from the sea salt treatment. Anyways I’m getting off track. We had lunch at the Signature Room and I ordered vegetable soup because the waitress told me it was vegan. I also had: a gardens salad without cheese or croutons, steamed broccoli and raspberry sorbet with fresh fruit. I asked the waitress to give me the best vegan options and the chef recommended these to me. The food was so fresh and amazing. After lunch we took a cab to Wrigley and hung out at the Hawkeye bar where I sipped on water while my family and Jeremy racked up a tab on beer. The music was loud, the environment was belligerent, but all I could focus on was the game. I was so upset at the fact that not ONE offensive player could catch the ball. Even worse we lost to IOWA STATE! I don’t really like the bar scene and losing my voice trying yelling across the table so I was so happy to get out of there….5 hours later. When we got home I had a veggie burger and a bowl of fruit with salad. I’m so tired I’m hitting the sack and it’s only 8! I hope to wake up in a better mood tomorrow!
September 9th - Day 9
So sad my parents left but it was a fun weekend. We spent a lot of money and had a lot of laughs (cheesy line coupon for the day) I have a lot of cleaning to do for tomorrow because I refuse to clean on Sundays. After sitting around drinking coffee and watching Cupcake wars with my parents they left around 10am. I took Grumples for a nice little jog and came back to make breakfasts. I had an easy breakfast : 1 medium banana, 1/2 grapefruit, 1 cup oatmeal with peanut butter and 1/2 cup unsweetened almond milk. After lunch I went over to the mall to look around for new pants and ended up walking off my breakfast struggling to find the right color. Lesson learned: internet shopping is easier. I came back around 2 and Jeremy and I went to Costco to get some things for house then played a game of mini golf (I won, per usual) Around 4:30 I started winding down and was ready to make dinner and relax for the night. I made mini pizzas and a large salad.
Pizza had : 1 vegan tortilla, 1/4 cup vegan cheese, crumbled tofu, basil, tomatoes, peppers, onions, garlic and avocados. Salad: 3 cups romaine lettuce, baby tomatoes, peppers, cucumber and Italian dressing. I plan on jumping into bed with my popcorn bowl and soaking up bad television : Married to Jonas, Kardashians, Cupcake Wars and The Great Food Truck Race…Sunday television is the best :) Today my vegan diet was good! I am craving pumpkin though! Something pumpkin for breakfast I’m thinking!
September 10th - Day 10
Started my day with Pumpkin Spice Oatmeal!! :) This is now officially my favorite fall breakfast. It’s hard to believe it’s only been 10 days of the vegan diet. I’m not sure if that’s a good thing or bad? I have been cleaning all morning because I promised myself I would. I try not to break my own promises which helps me stay motivated. I spent an hour in the gym running on the treadmill and doing 20 minutes of weights. I had a complicated time trying to find something completely vegan at a stop on the road. Everyone went to Wendy’s and the only thing I could have was the side salad with craisins and apples. Was this filling? HECK NO , but it kept me until I could go home and have a real meal. When I got home I had steamed broccoli, cauliflower, grilled veggies, roasted potatoes and a salad with lentils. Now that is dinner. I did a little work out video and now I’m ready for bed! Good night :)
September 11th - Day 11
Just writing the day Sepmtember 11th will never be the same. My mind automatically thinks of the tragic day 10 years ago. My hearts go out to all of you.
This morning I did a morning yoga routine because my muscles were so sore from weight lifting yesterday. It’s important to do yoga on an empty stomach. After yoga I came home and had a green smoothie for breakfast. A couple hours after that I needed some caffeine so I had a cup of green tea. I’m super excited because I just bough a complete set of superfoods which is all vegan snacks to go it comes w/

I spent the rest of the day painting and snacking on air popped popcorn and nuts. After I took Grumples for a long walk I came home and had a large salad with mixed lentils. I also cooked up some delicious sweet sesame snapped green beans which was one of the first recipes that convinced my brain vegetables were yummy. I’m getting ready to hop in bed and watch dancemoms! I’m so sad it’s the final episode, but atleast I have my pumpkin spice popcorn!!
September 12th - Day 12
Is it really only day 12? Still feels like it’s been forever! This morning I snacked not really focusing on breakfast. I was way too busy trying to get all the laundry and house cleaned. I’m one of those people that can’t focus on anything until my house is clean and organized. I even had to go to a doctor when I was younger because of it. He said it’s totally normal, so I’m all checked out! I snacked on strawberries, raw almonds and coconut milk yogurt. Coconut milk yogurt is pretty good but doesn’t live up to Chobani. I stopped at Wholefoods to pick up dinner from the salad bar. I pretty much put every vegetable you could think of. I also picked up Chai seeds to try out because all of you are tweeting me about them. You guys haven’t let me down yet! For dessert I’m going to have chocolate chips and strawberries! I ran pretty well today too maybe my body is finally adjusting. I did read yesterday hat you should change your die 1 week prior to running so that may have been why I was so week.
September 13th - Day 13
For breakfast I had something very unusual but something my neighbors grandma used to make us back in Hawaii. Instead of cereal she used to give us milk, rice and sugar in in a bowl. Sounds weird and awful right? Well i was delicious and surprisingly addicting. So for breakfast today I had something similar. I used unsweetened almond milk, brown rice and truvia. You just cook the rice with water as box instructs and add 1 cup of unsweetened almond milk. I also added blueberries, almonds and strawberries for more nutrients and texture. After breakfast I went for a great run followed by strength training. For lunch I had lentils wrapped in lettuce with a green smoothie. For dinner I went to Potbelly and had vegan vegetable soup with a salad. I’m off to bed early for the 5k race tomorrow.
September 14th - Day 14
This morning I ran a 5k race with 100 others. I placed 26th which was good for me because I’m not a professional runner and don’t do too many races. I was proud :) After my race I stopped at a farmers market and picked up fresh cherries, apples and sweet corn. When I got home I made Baked Chocolate Chip Donuts and plan on making them again tomorrow for the Hawkeye tailgate. For lunch I had a light salad with tons of vegetables. Jeremy and I were going out to dinner but when we got to the restaurant there was a 30 minute wait and we were too impatient and hungry so we decided to go somewhere else. We drove literally 1 hour with our GPS continuing to lie. When we got to our destination the restaurant was closed. So we drove an hour back home, stopped at Jimmy Johns for him and then I dove into bed with popcorn and trail mix. I was so exhausted from waking up early to run I just want to sleep. Now I’m cuddling with Grumples and watching mean girls about to hit the sack! Good night!
September 15th - Day 15
This morning I woke up super early for a tailgate with Jeremy. I brought a vegetable tray, baked chocolate chip donutst and bottled water. The donuts were a hit and kept me full through the morning and game. After the game we walked 2 miles back to the car and were starving! We didn’t know where to go so we stopped at a soup/salad buffet. I had a large salad with: lettuce, cucumber, onion, broccoli, carrots, radishes, snap peas, cauliflower and Italian dressing. I also had a bowl of vegetable rice soup. When I got home I took Grumples for a super long walk and then came back to relax. After waking up so early I was ready for a afternoon nap. I woke up around 5pm and got ready for the night. Jeremy took and I went to a drive in movie with Grumples and brought skinny pop popcorn and what was left of our veggie tray. Our movies ended late so we just came back here to call it a night. After I take Grumples out one last time I’m off to bed.
September 16th - Day 16
It’s hard to believe that it’s already Sunday. I still feel like this has been the longest month of my life. The vegan diet is starting to become natural. I don’t have to second think everything before I eat it. I’ve already learned so much but still learning. For breakfast this morning I had oatmeal with: walnuts, cocoa powder, banana and PB2. For lunch I had Broccoli slaw, chickpeas and 1 sweet potato. Sundays are my favorite because if I don’t have anything important going on, I like to be lazy. After taking my dog to the dog park to play I stopped at Michael’s to pick up some new paints for a painting I’ve been working on for the back of my bed. I like to switch them to make them cohesive to the season. When I got home Jeremy wanted to run to Costco to pick up some groceries so I tagged along with him. Who doesn’t love the samples? We picked up a new bag of skinny pop, dried mandarins lettuce, green tea and raw almonds. For dinner tonight I had tomato soup, green beans and raw almonds. I wasn’t too hungry because I kind of snacked all day on popcorn and dried fruits. I also made a pumpkin pie cake batter dip today! It was delicious The days I don’t workout I tend to snack more. Time to get back painting! Excited for my T.V. Shows tonight too!
September 17th - Day 17
September 18th - Day 18
This morning for breakfast I was craving something chocolaty and filling. I know having chocolate for breakfast is very unhealthy and out of my character so I decided to stick with oatmeal and give it a chocolate twist. I came up with Chocolate Cherry Oatmeal! It was so delicious! After breakfast I went to the gym for my Zumba class. Today’s class was so funny. Three 70 year old ladies were in front of me having a blast and shaking it like Beyonce! After my work out I stopped at Starbucks and got a soy milk sugar free vanilla latte. I sat outside and finished up reading. When I got home Grumples was excited to see me so I took him out for a little walk. When we got back I spent the next couple hours cleaning the house. Tonight Jeremy and I are going to golf 9 holes before it gets dark. After we are going to come back and make dinner together.
Golfing was super fun (Beat him by 4) I had rice, corn and bell peppers with spaghetti sauce, which is now my new favorite! I usually eat squash or zucchini with my spaghetti squash but peppers gives it a new flavor!
September 19th - Day 19
It’s halfway through the week and I’m super excited because it’s getting closer to Jeremy and I’s vacation :) After my morning run I spent a couple hours walking the mall picking up some new clothes for our trip. We are heading down to Dallas in the warmer weather. I am kind of worried about the vegan diet on vacation. I won’t be grocery shopping and all of my meals will be restaurants or gas stations…Any tips?? For breakfast this morning I had my homemade granola bars and 1 grapefruit. For lunch: 1 banana, almonds, squash and an avocado over salad. For dinner Jeremy and I are going to Potbelly’s. I’m going to order the vegetable soup with a salad.
September 20th - Day 20
Two more days and we are on the road headed to Dallas! Ive done a little research on restaurants to try and different places to see. For all of you who live or have been to Dallas what should I definitely see? Jeremy’s best friend lives there and we are going to stay with him for a couple days. I’m sure he will give us a great tour. I plan on packing popcorn, nuts, dried fruits and veggies to snack on during the road trip.
For my workout today I woke up around 6 and went to a yoga class. It was so relaxing and calming. Jeremy won’t be home until late because he is finishing up his project at work so Grumples and I will probably pick up a salad from Whole Foods and pass out to a documentary.
September 21st - Day 21
Ahh I was so excited today when I found Pumpkin K-Cups! Anything pumpkin this time of year excites me. Today I have tons of work to do around the house before we go on our vacation. I’ll be busy all day doing laundry, dishes and mopping. Sounds super fun right? There is a doggy festival I may take Grumples to. Tonight for dinner I’m going to keep it light and easy and make a pasta dish with peppers. For lunch I bought an extra salad last night at whole foods that I plan on having. Salad: chickpeas, almonds, peppers, cauliflower, raisins, spinach leaves, snap peas and Italian.
September 22nd - Day 22
Yay! Going on vacation tomorrow! Today was good but I had the crazy urge to eat pizza. Jeremy worked almost 16 hours today and brought home pizza. It smelt so good…the cheese, crust….everything vegan that I promised not to touch. I forced myself to go to bed and after 5 minutes I forgot about it. I think removing yourself from the situation is the best option. I sound like an addict…it was only a piece of pizza lol. Maybe I can find some healthy vegan restaurants on my vacation! For breakfast I had banana muffins made from Tasha’s blog. They were so delish. For lunch I had leftover spaghetti squash with a salad. For dinner I had a baked potato and a grilled morning star veggie burger. Sweet dreams everyone! I’ll be on the road bright and early! YAY!!
September 23rd - Day 23
Well after 6 hours in a car, we made it to IOWA…no Iowa is not where we are vacationing. My parents live here so we are dropping off Grumples. I woke this morning to something delicious smelling. My adorable mom who reads my blog religiously was baking a breakfast bread. It was vegan! I was so impressed. She knows I love pumpkin, so she made healthy banana pumpkin bread. I asked her where she got the recipe. She said “My head, it probably taste like….it came from my head” I couldn’t believe it! Smelt and tasted wonderful. She let me pack the rest to take on my trip. For dinner my mom and I made cauliflower mash , grilled sweet potato fries and baked peppers. We of course are now watching movies and eating a giant bowl of popcorn/almond/raisin mix! The movie is about to start! Goodnight :)
September 24th Day 24
After 7 hours in the car Jeremy and I have made it to Branson Missouri. This is just a little stop / rest before we head to Dallas! I haven’t been here since I was 14 years old. It really looks a lot different now. Even thought this isn’t my cup of tea (or Jeremy’s) we are going to make the best of it! We stayed at the Grand Victorian Hotel which was HILARIOUS ..it was really nice but full of cat pictures and large stuffed teddy bears. Apparently that’s Victorian. The pool is amazing though! We went to Ripley’s Believe it or not and learned some interesting facts. For dinner we are going to Ruby Tuesday’s. They have the best salad bar by far! It’s also pretty cheap. For lunch we had Jimmy Johns. I had an Unwich with loaded veggies and mustard. I also had a bag of almonds I stuffed in my purse.
September 25th - Day 25
Off to Dallas! This is going to be a 12 hour drive but we are so excited! Ive heard nothing but good about Dallas.
