Chocolate Chip Cranberry Banana Pancakes W/Flax!

This morning I needed a filling breakfast to get me through my run/workout! I made some vegan pancakes with energizing nutrients. I also had a large orange on the side. This gave me an amazing boost out the door! 

Ingredients:

  • 1 Cup Whole Wheat Flour
  • 1 Packet Truvia
  • 1 Cup Unsweetened Almond Milk
  • 1 Tbsp Baking Powder
  • 1 Tsp Cream of Tartar
  • 1/4 Tsp Salt
  • 1/2 Small Banana
  • 1/2 Tbsp Vanilla Extract
  • 2 Tbsp Vegan Chocolate Chips
  • 1 Tbsp Flax Seeds 
  • 1 Tbsp Almonds & Walnuts
  • 2 Tbsp Dried Cranberry 
Light Syrup (Optional)

Add all dried ingredients to a bowl and mix together.

Slowly stir in liquid ingredients until completely combined and no lumps left.

Spray a pan with olive oil spray and heat skillet to medium high. Cook 1/4 cup sized pancakes on both sides until lightly brown

Makes 2 Servings (6 Pancakes) Per Serving: Calories 198, Fat 3.3g, Carbs 22g, Protein 3.4g Fiber 5g
