Pecan Spaghetti Squash W/ Feta and Chickpeas!

Tonight I was in the mood for something filling and warm. I also wanted something fast. Instead of indulging in carbs, I substituted noodles with spaghetti squash. I ran out of pasta sauce tonight, so I added different ingredients to flavor up the dish. 

Ingredients:

  • 2 Cups Cooked Spaghetti Squash
  • 1 Tbsp Feta
  • 1 Cup Grilled Bell Pepper
  • 1 Tbsp Chopped Pecan
  • 1 Tsp Olive Oil
  • 2 Tbsp Chickpeas 
  • 1/8 Tsp Black Pepper

Directions:

  1. Microwave or prepare spaghetti squash in oven. 
  2. Mix in olive oil and black pepper.
  3. Top squash with: grilled peppers, chickpeas, chopped pecans and feta.
