The perfect ending to my weekend.

I am such a happy girl tonight. Jeremy has been working in Arizona for almost three weeks and I picked him up at the airport today! I have been living off seafood, vegan burgers, and random dinners for one. Aside from hanging with a couple friends, I have been crazy lonely. I think my dog is annoyed with how much I talk to him.

Separation is good in relationships. It makes you realize how much that person means to you everyday. Sometimes I take our relationship for granted and forget to be thankful. It’s hard to know what missing a person is like until they are actually gone. All the little things make a big difference. Things like holding my hand in the car, cuddling up to watch a movie, or just a little kiss seems so small. But when they are no longer there, they seem so big. Does that make sense? I guess what I am trying to say is that I need to appreciate the little things. And it took not having those things around to realize it. Separation really does make the heart grow fonder ;)

I decided to have sushi for one of my single nights. I chose brown rice California rolls and vegetable California wraps.To go with my sushi, I whipped up some broccoli and green beans. First I steamed the broccoli and green beans Next I cooked them in a non-stick frying pan with low sodium soy sauce and sesame seeds. 

Oh and I’m pretty sure I watched 90% of the movies in the Redbox machine. 

The next day for lunch, I made a large salad with my leftover sushi! One bag salad greens, Whole Foods butternut squash, leftover sushi rolls, croutons, and Amy’s lemon poppy seed dressing. 

After lunch, I went to the movies with a friend. We saw the Bling Ring...it was amazing. I have never been on the Emma Watson train, but now I most certainly am! 

Saturday morning I did a quick 35 minute workout. This is one of my favorite ways to increase my heart rate. I like to find the most hilliest street for it.

-Walk 5 minutes
-Run 10 minutes
-Walk 5 minutes
-Run 10 minutes
-Walk 5 minutes.

I use to practice this method a lot. It helped me become a runner. If it’s too hard at first, switch it around and run five minutes/walk ten minutes.

Dinner was a little random Saturday night. I didn’t feel like grocery shopping, so I made do with what I had in the fridge. I baked corn on the cob in the oven with two vegan burgers at 350 degrees for twelve minutes. I cooked up the broccoli and green beans like the photo above. I also had sweet red chili sauce to go with my corn. It’s an amazing combination! 

To deal with my loneliness, I dove into a pint of Arctic zero! I was too full to finish, but wouldn’t have felt guilty if I did. This is a lifesaver sometimes. Especially when I feel like eating for no reason at all. 

After picking up Jeremy from the airport we went to dinner at Paizanos. To start the meal we both ordered side salads. I had a Caesar salad with grilled shrimp. 

We both were in the mood for pizza. We agreed on splitting a pizza with green pepper, pineapple, and onion! Paizanos has amazing pizza. The flavor is spot on! After dinner we took a little walk around the town. It was the perfect ending to my weekend. And to make it even more perfect, I am going to cuddle up to Jeremy and watch a movie!
